Beef and Cheese Nachos

Easy Recipe As A Meal or Appetizer


Here is a recipe for an easy meal or appetizer to serve for either yourself or others


  • 1 lb of ground turkey or beef of your choice
  • 1 pkg of taco seasoning
  • taco chips of your choice
  • diced tomatoes
  • shredded lettus
  • shredded cheddar cheese
  • liquid cheese sauce
  • sour cream
  • salsa sauce


In a saut’ing pan cook ground turkey completely. Add taco seasoning according to the directions on the back of the package.

While the meat is cooking, prepare the tomatoes, lettus, and cheese. Place all of these ingedients individually in seperate bowls.

Once the meat is ready to be served, place on a bed of tortilla chips. Top with all of the above ingredients according to your taste.

Preparing Meals In Advance

My friend, are you tired of having to prepare meals every day and struggle like myself in deciding what will be for supper?

Try this handy life hack, prepare a weeks worth of meals all at one time. As you are making one meal consider preparing several others at the same time.

I did this on Sunday and I am so thankful I did. It took me two hours which in the spectrum of the time saved this week was well worth the effort.

Several of the meals I prepared in advance are included below…

  • meatloaf, mashed potatoes, gravy, and frozen peas and carrots
  • saute’ed mushrooms, onions, and cooked chicken chunks served over a bed of riced cauliflower and salute’ed asparagus
  • baked chicken, mashed potatoes, chicken gravy, Brussel sprouts
  • chicken tostados
  • beef and cheese nachos
  • homemade pizza

I precooked all the meats and separated into meal portions.

I peeled and diced potatoes and placed in plastic bags according to their portion size. I put a small amount of water in the bags and then froze them. This keeps the potatoes from browning while waiting for their meal to be cooked.

I used my food processor to cut a head of cauliflower into riced pieces. After I cut the cauliflower into rice form, I placed in a bag and put in the freezer to keep it from turning mushy while I wait for its meal day.

I made my homemade pizza dough ahead of time as well. I placed in an oiled plastic bag and refrigerated until I am ready for its meal.

As for my vegetables, half of them are already frozen while some are fresh with no preparation work required.

My friends, this has been such a helpful way to save time in daily meal planning.

I will be posting the recipes to these meals as I have time to write them up.

Baked Sausage and Spinach Stuffed Shells

Do you need an easy supper to make in advance? Check out this recipe I am using today for mine.


1 12 oz box jumbo shells

1 lb sausage of your choice

1 16 oz low-fat cottage cheese

2 c Italian shredded cheese

1 c grated Parmesan cheese

1 egg

2 c cut spinach

1 tbsp dried oregano

1 tsp garlic salt

1 tbsp ground flax-seeds

1 16 oz spaghetti sauce


Pre-heat oven to 375 Degrees (F).

Boil water in a large sauce pan. Add shells to boiling water and cook to a tender state but do not overcook. Brown the sausage in a saute’ pan. Mix together the cheeses, spinach, garlic salt, oregano, flax-seed, and egg. Lastly, add the cooked sausage and stir well.

In your 9 x13 pan, line the bottom with spaghetti sauce. Stuff the shells with cheese, sausage and spinach filling. Top with spaghetti sauce. Sprinkle with cheese and oregano and  bake for 40-45 minutes.

Side note:  If you wish to add or hide additional veggetables, this is a great dish to do it with. You can easily hide riced or mashed cauliflower, mashed butternut or acorn squash and pumpkin to this mixture.

No one will know these ingredients have been added, but you can enrich your meal with additional nutritional value without your picky eaters even knowing it.

Also, if you have left overs from this meal try roasting a spaghetti squash and serve with your leftovers.

French Bread Pizza

Check out this easy one,


1 Loaf of French Bread

1 Jar Pizza Sauce (or homemade sauce – see recipe below)

Toppings of your choice (I used mushrooms, pepperoni, fresh green peppers)

Shredded Italian Cheese

Garlic Salt



Pre-heat your oven to 390 degrees F. Grab your cookie sheet and cut your French bread in half, then cut it in half opening up the bread. Lay it flat on the cookie sheet. Spread a layer of pizza sauce on your bread. Add your toppings, sprinkle with cheese, add a dash of garlic salt and oregano.

Bake in your oven for about 15 mins. You are looking for your French bread to be toasted.

When done remove from the oven and serve hot.

Enjoy your Pizza!

Extra Information…

Homemade Pizza Sauce


1 small can of tomato paste

1 c water (approximately)

1 tsp garlic salt

2 tsp oregano

1 c soft butternut squash (optional if wanting to add extra healthy version)

1 Tbsp flaxeed, ground (optional if want extra fiber)


In a small sauce pan over low to medium heat add tomato paste and water, stirring until well blended. (Add water slowly insuring your sauce consistency is thick like spaghetti sauce.)

Add remaining ingredients stirring until well blended.

Homemade Chili


This is a great recipe to make on a cold and rainy or snowy day. It is a really easy and can be made in a crock pot ahead of time for a no work supper meal for later. It can also serve as left overs if you make enough.


1 bag red beans (or 1/2 bag each of red and black beans)

1  20 oz – can tomato sauce

1 10 oz – can mild diced tomatoes with green chilies (drained)

1 packet chili seasoning mix

1/2 tsp garlic salt

1/2 tsp chili powder

1 Tbsp ground flaxseed

1/2 diced onion

1 lb ground beef

1 lb ground turkey


Boil beans on medium/high for about 20 minutes to a  1/2 hour. Place remaining ingredients in your slow cooker. Place in low if you are preparing in the morning or high if you are preparing in the afternoon.

Taste towards the end of it being done. Adjust seasonings to your taste preferences.

Serve with riced cauliflower, a bed of rice, tortilla chips, corn chips, baguettes, or just alone.

Lastly, add shredded cheese of your choice and add a dollop of sour cream.

This is a great recipe to make enough to have left overs for another super easy nights supper.

Chicken Breasts

Fresh Lemon

Lemon/Black Pepper Seasoning

Add a small amount of water to the bottom of the pan to prevent chicken from sticking. Sprinkle lightly with lemon/black pepper seasoning. Cut fresh lemon into slices. Drizzle lemon juice over the chicken and place slices on the top. Bake for about a half hour or until baked completely.



1 c Quinoa

2 c Water or chicken broth

Lemon/Black Pepper Seasoning


Boil 2 cups of water (chicken broth); add one cup Quinoa to boiling water. Bring back to a boil and simmer for an additional 15 minutes or until light and fluffy. Season to taste with lemon/black pepper and serve.



Zucchini (enough for your family)

Olive oil

Lemon/Black Pepper Seasoning


Heat over medium heat olive oil. Cut your clean zucchini into chunks. Saute’ until tender. Sprinkle to tast with lemon/black pepper seasoning.

Avocado Egg Salad Spinach Wrap with a Caesar Salad

Avocado Egg Salad


2 hard boiled eggs

Dash of garlic salt

Sriracha sauce to taste

1/4 to 1/2 avocado, smashed

Approximately 1/4 cup fresh spinach, cut up (or to taste)

Greek yogurt (or mayonnaise), enough to bind your egg salad together

Spinach wrap

Pinch of Parmesan Cheese


Crack and peel your eggs then dice into chunks placing in a bowl. Cut and smash enough avocado that makes you happy as well as adding your spinach. There are no precise measurements required. Everything is measured to your taste.

Add remaining ingredients to the bowl and stir well. Take your spinach wrap, add a layer of spinach leaves, sprinkle Parmesan Cheese on top of the spinach. Then add your add mixture to the top. Once everything has been added, roll your wrap and cut in half.

Caesar Salad


Romaine lettuce

Shredded regular head of lettuce


Parmesan Cheese


Caesar Salad Dressing


Add all lettuce, cut up into a bowel. Add Parmesan Cheese, croutons and stir well. Drizzle with your Caesar Salad Dressing for flavor.

Lastly, add a fruit of your choice to complete your healthy lunch option.

Friday Night Comfort Food

Are You Looking For A Comfort Food Supper?


Are you tired and cold from a long winter day of fun, skiing, shoveling, walking, or surfing (if you are in a warm climate)?

I have a “not” healthy supper option for you per my daughter’s craving request.

French Toast with Bacon is what I am going to give you for a choice tonight.

We were effected by the Blizzard of 18’ yesterday so I am tired and sore tonight from the massive amount of shoveling I did.

Normally, we are a traditional Friday night pizza kind of family, but my body was not up to making homemade pizza tonight. However, if you don’t like my choice of French Toast and Bacon, you could go to Pizza for an option. You will find the recipe I would use for Pizza by using the recipe for Pull Apart Pizza. What you would do instead of making it as a Pull Apart Bread, make it into a pie.

I used the Apple Cinnamon Oatmeal Bread I posted earlier today for my bread. It was delicious as French Toast.

Potato Soup For The Soul

Are you in need of some comfort food on a cold winters night?

Try this wonderful soup. It is a recipe I received from my sweet German friend when we lived in Germany for three years.

Unfortunately, I forgot to take a picture when I made it yesterday, but the next time I do make it, I will be sure to edit this recipe and add it then.

Potato Soup

This recipe makes enough for about 2 people


3 c water

5 small potatoes (peeled and diced)

2 medium size carrots (peeled and diced)

1/2 tsp salt (or enough for your taste)

1 tsp garlic powder

1 tsp parsley

3 beef frank hot dogs, cut into small pieces (any meat will work, especially ham, but I like it the way Heike made it with hotdogs)

1/2 cup all purpose flour (enough to thicken water into a gravy)


In a medium sauce pan boil your potatoes, carrots, and spices all together. When they are soft, add diced hotdogs (or meat of your choice). Once the hotdogs are cooked, thicken water into a gravy base with your all purpose flour.

When this is prepared as a meal, serve with grilled Panini sandwiches, chips, or salad.

Lastly, enjoy your comfort soup! It promises to not only warm your body, but it will warm your heart and soul as well.

Mushroom Alfredo with Broccoli Supper

Mushroom Alfredo with Broccoli

Are you looking for an easy supper idea?


Try this Mushroom Alfredo with Broccoli dish.


  • 1 jar of Alfredo sauce (easy method instead of making from scratch)
  • 1 8 oz box of any choice mushrooms
  • 2 tbsp coconut oil
  • 1 tsp garlic powder
  • 2 tsp dried parsley
  • sprinkle Parmesan cheese
  • approximately 1 cup cut spinach
  • spaghetti
  • fresh broccoli

{All of the above ingredients are not exact measurements, they are to taste.}


  • In a saute’ pan heat on a medium high heat the coconut oil until melted. Cut the mushrooms into pieces and cook until soft. Add garlic powder, dried parsley until cooked. Add spinach and turn down to warm.
  • In a sauce pan boil water and when boiling add noodle of choice (I used spaghetti noodles) until soft.
  • Drain and add noodles to Alfredo sauce and stir until well mixed.
  • When serving sprinkle with a dash of dried parsley and Parmesan cheese.
  • Lastly serve with fresh steamed broccoli
