Chocolate Coconut Balls

Day 20

Chocolate Coconut Balls

This is a recipe I have used for the past several years. They are an added feature to a cookie platter that most people will enjoy.

Ingredients

2/3 c corn syrup

2 1/3 c flakey coconut (add enough so you have some structure and can make a ball shape)

1/4 melting chocolate

1/2 tsp coconut oil

Directions

In a medium sauce pan over low heat warm corn syrup to a thin consistency. Remove from heat, add coconut and stir until it is stiff and you can shape into balls. It is safe to add more coconut if you need more.

Form your balls and place on a cookie sheet lined with wax paper. Chill in a refrigerator long enough to make cold.

Melt your chocolate with your coconut oil on low heat in the microwave stirring frequently . Be sure to not burn your chocolate.

Remove your coconut balls from the refrigerator and dip into your melted chocolate and dry on wax paper.

Disclaimer, I was talking with my friend about these last night and we will be working on making these healthy. When I have pulled a healthier version together I will post it later.

This is a really easy recipe my neighbor shared with me. It is unique but tastes amazing.

Ingredients

1 small can salted peanuts

1 12 oz butterscotch morsels

1 medium can Chinese noodles

Directions

Melt butterscotch morsels in a microwave. Stir in noodles and peanut. Spoon out on wax paper and let cool.

Peanut Butter Candy

This is not the image of these candies because I have not made them yet, but chose to use my peanut butter fudge recipe as an image that is similar to these candies.

Day 15

This is a recipe my neighbor gave me. I love using some of her recipes because they are quick, easy, and few ingredients are required (usually).  Everything she makes is purely divine. I tell her often she is so good, she could open up a bakery of her own. 

I hope you enjoy this one as well.

Ingredients

1 lb brown sugar

1 c white sugar

4 Tbsp white corn syrup

1 c water

1 small jar of peanut butter

Directions

Put sugars, syrup and water into a sauce pan and cook to a soft boil (very soft). Remove from stove and add peanut butter. Beat until stiff. Pour into a greased 9×9 inch pan. Let cool, cut, and enjoy.

Easy Homemade Chocolate Fudge

This is a recipe I use every time I need fudge. I mostly make it at Christmas, but if I was to need a fudge recipe at some point during the year, this is the one I use.

Avoid making this recipe on a wet and humid day. It will not set well.

Ingredients

3 c Hershey’s Semi Sweet Chocolate Chips

1 (14 oz) Sweetened Condensed Milk (I used caramel flavor and it was delicious.)

1 c Walnuts, chopped

1 1/2 tsp Vanilla Extract (any flavor of your choice will work well, Peppermint is an amazing flavor to choose if you like minty fudge.)

Dash of Salt

Directions

In a heavy sauce pan, over low heat, melt the chocolate chips with the sweetened condensed milk and salt. Remove from heat; stir in walnuts and vanilla.

Spread evenly into a waxed paper lined 8×8 or 9×9 pan. Chill for 2 hours or until firm. Turn fudge onto a cutting board, peel off wax paper and cut into squares.

Store at room temperature.

Disclaimer, my daughter taste tested and looooooved it.

Christmas Mints

Day 11

This is a recipe my mom used when I was growing up. She loved it for its simplicity.

I hope you enjoy it as well.

This makes 3 dozen 1-inch mints

Ingredients

1 (3oz) package softened cream cheese

1/2 tsp peppermint extract

3 c sifted powdered sugar

Christmas sprinkle sugar (optional)

Directions

In a large bowl, with an electric mixer, beat the cream cheese and peppermint extract together. Gradually add powdered sugar and beat until smooth. Knead the last of the powdered sugar by hand.

Form mixture into balls the size of cherries and roll in sprinkle sugar. Place on wax paper and flatten with a fork.

Let it stand overnight to harden.

Peanut Butter Fudge

25 Days of Christmas 

Day 9

This is a recipe I received from an Aunt of mine years ago.

I make it yearly as a way of remembering her and the time I spent at her house while growing up.  

Ingredients

2 heaping Tbsp peanut butter

2 c sugar

1/2 c milk

1 tsp vanilla

nuts (optional)

Directions

Put all the ingredients in a sauce pan. Bring to a boil, boiling for 5 mins. After coming to a full boil, remove from heat and beat until thick.

Pour in a buttered pan, cool, and cut into squares.

(I have learned over the years to never make fudge on a rainy or humid day. It will not set properly.)

My Daily 25 Days of Christmas Recipes

Merry Christmas and Happy Holidays to my faithful followers. 

Last year, every day I posted a favorite holiday recipe that I make every year from now through Christmas. These are fun and easy recipes to make. Many are ones you can enjoy making together as a family while some are ones you can throw together for a fun and festive snack your kids can come home from school too. 

I love many of these recipes because if you have your Christmas lights up and your music playing in the background, then you have the smell of these coming from your kitchen, you have set your family up for some beautiful memories of Christmas’ to come.

Stand Firm On Your Truth

Today’s Encouragement is inspired by my daughter’s latest medical hardship.

I have taken her to Urgent Care two times in the past four days for help with her mega migraines.

Her first trip went better than her second one. The first doctor has a better understanding of what migraines are and how severe Kiddo’s can be, however today’s wasn’t as sympathetic. I suspect she may lack an understanding of how debilitating mega migraines are and does not understand how bad they are for my daughter.

It is my hope and prayer today’s difficult day will inspire and encourage you to know if you are standing on solid truth, it will not matter what any one else will think about you.

Today’s quote came from our experience at the doctor’s office.

“Standing on truth allows you to always know you are right, no matter what anyone else believes.” 

I am not sure how much today’s doctor believed Kiddo was in the pain she was in, but as I write tonight for tomorrow, I can sit here knowing in my heart that it does not matter what she believes or does not believe, we know the truth. We know how debilitating these migraines are and how her other chronic illnesses affect her migraines and at the end of the day that is all that matters.

Today’s encouragement and motivation is this same truth for you. It does not matter what others believe. It only matters what you know as truth. 

Stand firm on the knowledge of your truth and do not let the lack of other’s understanding sway you in what you believe.

Your truth is all that matters at the end of the day.

Chocolate Covered Pretzels

Chocolate Covered pretzels

Ingredients

1 bag do any shaped pretzels

Dark Chocolate Bark

White Chocolate Bark

Directions

Melt your dark chocolate, melt half of the white chocolate in a microwave oven, then mix together. Be sure to melt it  on low for 30 second intervals. Be careful as to not burn the chocolate.

Dip your pretzels into the chocolate and harden on a cooling rack.

This recipe is another great blend of salty and sweet.
