Heat Wavy Easy Meal

I have a super easy supper idea for those who are struggling with this ugly heat wave?

This idea is a great idea for an easy meal to prepare without heating up the house to do so.

Grab a meat of your choice, some shrimp and your grill. Then barbecue away. It does not take long for this to cook and you kept your house cooler as well. I call that a double win.

Well, actually a triple win because I was put on grill restriction a long time ago, so I personally did not even have to go outside to cook it either.

Now our house is still cool, supper is done, and the kitchen was an easy clean up.

Ribs and Veggies

Here is another simple, yet healthy meal to consider this summer.

Grab a package of ribs, grill them and add simple vegetables such as tomato and cucumber and blueberries.

You will walk away satisfied, while skipping the full feeling.

Summer Burger

Do you need a fresh supper idea?

Try this one. Grilled angus burger topped with cheese. Place it on a bed of lettuce and add a fresh tomato to the side.

Do not be afraid to add a few baked fries seasoned with garlic salt, onion powder, and basil.

Lastly, add a few slices of fresh watermelon.

It is a filling meal, but not as bad as a traditional hamburger and French fries.

Enjoy this lighter twist to a traditional summer meal.

Liza’s Banana Bread

25 Days of Christmas

Day 3

This is a super easy recipe to whip together. It is the only banana bread recipe I will use. It is great for a loaf of sweet bread or bake as muffins. It is totally up to you to how you want to bake it. If you choose to bake as muffins, bake at the same temperature as the loaf bread but only bake starting at 25 minutes. Check before removing from the oven to be sure they are done.

Ingredients

  • 3 to 4 well ripened bananas
  • 1 c sugar (I use sugar cane granulars)
  • 1/4 c butter (I replace with coconut oil)
  • 1 egg
  • 1 tsp vanilla
  • 2 c flour
  • 1 tsp baking soda
  • smidge of salt
  • 1 tbsp flaxseed (ground)
  • walnuts (optional)

Directions

Preheat oven to 325 degrees. Cream together bananas, sugar, egg, butter, and vanilla. Sift flour, baking soda, flaxseed and salt together and add to bananas. Sprinkle with walnuts before baking. Bake at 325 degrees for 1 hour.

Gingersnap Dip

25 Days of Christmas 

Day 2

This is an amazing recipe to put together with your homemade gingersnaps from yesterday.

Ingredients

  • 1 Package (8 ounces) cream cheese, softened
  • 1 c confectioners’ sugar
  • 2 tsp pumpkin pie spice
  • 1 carton (8 ounces) frozen whipped topping, thawed
  • 1 package (16 ounces) gingersnaps

Directions

  • In a small bowl, beat the cream cheese, confectioners’ sugar and pumpkin pie spice until fluffy. Beat in whipped topping until blended. Refrigerate until serving. Serve with gingersnaps.  Yield: 3 cups.

Homemade Chili

1 lb ground turkey

1 lb ground pork

1 green bell pepper

1 medium diced onion

1 minced cloves fresh garlic

1 10oz can diced tomatoes with green chilies

6 oz can tomato paste

1 package of mild chili seasoning mix

1 tsp garlic salt

2 tsp chili powder

1 cup of water

1 Tbsp sour cream

a sprinkle of cheddar cheese

Directions

Place all the ingredients into a crock pot and stir well. Place on high and cook for 3 hours.

Place on a bed of riced cauliflower and add a dollop of sour cream some sprinkle cheddar cheese on top.

Grilled Ham and Cheese Panini with French Fries

Try this grilled ham and cheese panini sandwich with French fries.

Ingredients

2 slices of bread

Leftover ham slices

2 cheese slices (your choice of cheese)

Butter (or olive oil)

Frozen fresh fries

Seasoning of your choice

Directions

Heat either a sauté’ pan to a medium heat or use your George Forman grill. Spread the outer slices of bread with butter or olive oil. Put butter side down on pan. Place ham slices and cheese slices on bread. Top with the second buttered bread slice (buttered side down on pan side) and grill both sides until golden brown.

Bake your fries in the oven according to the directions on the bag. Once the fries are baked, sprinkle with seasoning to taste.

Healthy Tuna, Rice, and Spinach

Are you looking for an easy and light lunch or supper idea?

Feel free to try this healthy option of tuna, brown rice, and spinach.

Ingredients

1 package of tuna, fresh or frozen

brown rice (or any rice of your choice)

fresh spinach

lemon pepper seasoning

garlic salt

olive oil

Directions

Heat your sauté pan on medium high, lightly oil your pan with olive oil. When hot, place your tuna is the pan and sprinkle with seasonings to taste and cover. Cook for 5 minutes then flip. Cook for an additional 5 minutes or until done.

For the rice, follow the preparation directions.

For the spinach, use the same pan you used for your tuna, add a bit more olive oil to the pan. Place your fresh spinach into pan using a low to medium heat and sprinkle with garlic salt. Continue to turn over frequently so it doesn’t get soft. Once it turns a crisp green remove from the pan and serve.

Healthy Chicken and Rice Soup

This is a healthy and easy soup recipe for your family if they don’t feel good or if you just want an easy lunch idea.

Ingredients

2 1/2 c water (or chicken or vegetable stock)

1 chicken breast (cubed)

1 1/3 c rice of your choice (I chose whole wheat)

1/2 diced onion

1 stalk of celery

1 tsp garlic salt

2 cubes of chicken bullion (if you used water above)

1 tsp dried parsley

1 Tbsp flax-seed (ground)

Directions

In a sauce pan, boil water. Add chicken either raw or cubed already, onion, celery, seasonings. Cook on high for approximately 20 mins. If you used a raw chicken breast, remove it from water and cube it. Once cubed, add back in the pan.  If it is completely cooked add your rice. Allow this to cook until the rice is tender.

Enjoy your easy and healthy soup.

Beef and Cheese Nachos

Easy Recipe As A Meal or Appetizer

Here is a recipe for an easy meal or appetizer to serve for either yourself or others

Ingredients

  • 1 lb of ground turkey or beef of your choice
  • 1 pkg of taco seasoning
  • taco chips of your choice
  • diced tomatoes
  • shredded lettus
  • shredded cheddar cheese
  • liquid cheese sauce
  • sour cream
  • salsa sauce

Directions

In a saut’ing pan cook ground turkey completely. Add taco seasoning according to the directions on the back of the package.

While the meat is cooking, prepare the tomatoes, lettus, and cheese. Place all of these ingedients individually in seperate bowls.

Once the meat is ready to be served, place on a bed of tortilla chips. Top with all of the above ingredients according to your taste.
