Amazing Gingerbread Houses

I didn’t get one made this year, but we made this one last year. My daughter and a sweet adopted family friend made an amazing one that I am very proud of. I will add the directions to make it from scratch, The directions I will share will give you the recipe (which I will add as always), the house template, the supplies, and a royal icing recipe.

When you see my picture you will see it constructed in the shape of a log cabin. This was done on purpose. If you wish to do the same then roll your dough out in the form of a square or rectangle and when before baking use a ruler and pizza cutter and cut into blocks.

Ingredients

Note: This is a double batch to make an amazing house from.

1 c butter, softened

1 c brown sugar

1 1/3 c molasses

4 eggs

8 c all-purpose flour (divided)

1 tsp baking soda

1 tsp salt

1 tsp ground allspice

1 tsp ground cloves

1 tsp ground cinnamon

1 tsp ground ginger

Frosting

2 lbs confectioners sugar

1 tsp cream of tarter

6 egg whites

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, cream together the butter and brown sugar until smooth. Stir in the molasses and eggs. Combine 1 1/2 cups of the flour, baking soda, salt, all spice, cloves, cinnamon, and ginger; beat into the molasses mixture. Gradually stir in the remaining flour by hand to form a stiff dough. Divide dough into 2 pieces.

On a lightly floured surface, roll dough to 1/8 inch thickness. Cut into desired shapes (if you want bricks, cut with your ruler and pizza cutter now. Place pieces 1 inch apart onto parchment lined cookie sheets.  Refrigerate for 15 mins.

Bake for 8-10 mins in a preheated oven. Cool on a baking sheet for 5 mins before removing to a wire rack to cool completely.

Icing

In a medium bowl, sift together confectioners sugar and cream of tartar . Blend in egg whites. Using an electric mixer on high speed, beat for about 5 minutes, or until mixture is thick and stiff. Keep covered with a moist cloth and plastic wrap until ready to decorate.

Christmas Snowballs

Snowy Coconut Balls

This is an amazingly easy recipe with few ingredients but strong in flavor.

My family expects this simple cookie to be made every Christmas. It is also an easy cookie to add to a cookie platter.

Ingredients

2 cups all-purpose flour
2 cups finely chopped pecans
1/4 cup sugar
1 cup Land O Lakes® Butter softened
1 teaspoon vanilla
Powdered sugar

Directions

Heat oven to 325°F.
Combine all ingredients except powdered sugar in bowl. Beat at low speed, scraping bowl occasionally, until well mixed.
Shape dough into 1-inch balls. Place 1 inch apart onto ungreased cookie sheets. Bake 18-25 minutes or until very lightly browned. Cool 5 minutes; roll in powdered sugar while still warm and again when cool.

Christmas Real Vs. Perfect

Christmas baking in my house…

I have how much time???

With “x” amount of time, what can I get done?

Oh wait, I need to run out the door?

Ok, I can do this because last batch of cookies cake out of oven, but counter is a train wreck.

What do I do about this mess???

You take the dog with you so he doesn’t eat everything you just made, because he loves himself some sugar? Anyone else relate?

Then you repeat another day, but today, all the food first goes in oven (knowing no one will be home to turn it on.)

Second trip out the door, everything goes in the laundry room for the safety of your dog’s health and your baked goodies.

Just sharing a bit of real in my home.

Can anyone else relate to the realness of this story and not the perfect Hallmark Christmas program experiences?

Cake Box Cookies

Day 16

This is a very easy recipe to pull together if you have a simple cake box in your pantry.  

Ingredients

1 box cake mix of your choice

2 eggs

1/4 c water

1/3 c oil

Directions

Preheat oven to 350 degrees F.

Mix all the ingredients together.

Place scoops on an ungreased cookie sheet.

Bake 10 mins. Cool on a cooling wire rack.

Christmas Thumbprint Cookies

25 Days of Christmas 

Day 12

This is one of my go to recipes when I am pulling cookies together for Christmas cookie platters. It is also good if you need a cookie for a cookie I exchange program. They are simple and delicious.

Ingredients

1/2 c butter

1/2 c creamy peanut butter

1/2 c sugar

1/2 c packed down sugar

1 egg

1 1/4 c flour

1 tsp baking powder

3/4 tsp baking soda

1/4 tsp salt

1 bag Hershey’s Kisses

Directions

Preheat oven to 375 degrees F. Mix together the first 5 ingredients; then add remaining flour and mix until you form a sticky dough. Roll into small balls and place onto a greased cookie sheet. Bake 8-10 minutes or until just golden brown. Place unwrapped Hershey Kiss in center of each cookie, while they are still hot. Makes approximately 48 cookies.

Soft Sugar Cookies

Day 8

This is a recipe my mom used every Christmas as I was growing up and now I make them every year. I wouldn’t use any other sugar cookie recipe.

This recipe allows you to leave them plain, sugared, or frosted.

This is a recipe that will allow you to make the dough in advance and leave in a refrigerator until you are ready to bake. You also do not have to frost at the same time. You can bake and decorate on another day or time.

I hope you enjoy them as much as my family and friends have.

Ingredients

1 c sugar

1/2 c melted shortening

1/2 c sour milk (1/2 tsp vinegar to 1/2 c milk)

1 tsp baking soda (added to sour milk)

1 egg

1 tsp vanilla

dash salt

3 c flour (approximately, add more or less to mixture insuring the dough isn’t too sticky to work with)

Directions

Preheat oven to 400 degrees. Combine sugar, shortening, and egg. Mix sour milk and baking soda together (should be foamy). Stir in salt, vanilla and flour (enough to make dough still but not sticky).

Roll on floured surface and cut with cutters. Add colored sugar if desired or leave plain. Bake on ungreased cookie sheet for 7-10 minutes. When baked, remove from cookie sheet on to a cooling wire rack. When cooled, if wish, happy decorating. I included an easy frosting recipe yesterday to this category.

Frosting To Create Your Masterpiece

Day 6

Are you looking for a frosting that will bring your gingerbread men alive or make your sugar cookies works of arts?

How about those Christmas cupcakes or that gingerbread house, this frosting will bring all of these creative pieces together.

This is a recipe you can make in advance so the hard part is already done, all you have to do is decorate your project.

This is what I did today, I made my frosting this morning for when I make my next batch of gingerbread men and my sugar cookies.

Ingredients

1/2 c shortening

1/2 c butter or margarine

8 c confectioners sugar

2 egg whites

1 tsp vanilla

Directions

Blend all ingredients on a low-speed blender. Continue to blend until fluffy. Add only enough milk to make creamy, but stiff enough to create a frosting masterpiece.

Gingerbread Men

I used this recipe yesterday to make my little guys. This recipe is passed the taste test of my family and my husband’s coworkers.

They are soft and absolutely flavorful.

Ingredients

1/2 c margarine

1/2 c sugar

1/2 c molasses

1 egg yolk

2 cups sifted all-purpose flour

1/2 tsp salt

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1 tsp ground cloves

1 tsp ginger

1/2 tsp ground nutmeg

Directions

  1. In a large bowl, cream together the margarine and sugar until smooth. Stir in molasses and egg yolk. Combine the flour salt, baking powder, baking soda, cinnamon, cloves, ginger, and nutmeg; blend into the molasses mixture until smooth. Cover, and chill for at least one hour.
  2. Preheat the oven to 350 degrees F (175 degrees C). On a lightly floured  surface, roll the dough out to 1/4 inch thickness. Cut into desired shapes with cookie cutters. Place cookies 2 inches apart on ungreased cookie sheets.
  3. Bake for 8 to 10 minutes in the preheated oven, until firm. Remove from cookie sheets to cool on wire racks. Frost and decorate when cool.

Side Note: This picture was taken last year as a tribute to my daughter who was days away from having foot surgery. She had been in a foot boot since July and so to have a Gingerbread Man with a foot injury seemed appropriate in our home.

Last year, every day I posted a favorite holiday recipe that I make every year from now through Christmas. These are fun and easy recipes to make. Many are ones you can enjoy making together as a family while some are ones you can throw together for a fun and festive snack your kids can come home from school too. 

I love many of these recipes because if you have your Christmas lights up and your music playing in the background, then you have the smell of these coming from your kitchen, you have set your family up for some beautiful memories of Christmas’ to come.

Soft Gingersnap Cookies

Soft Gingersnaps

Are you looking for an easy Ginger Snap Cookie recipe?

I have a super easy and soft cookie recipe that I use from All Recipes Website Grandma’s Gingersnaps

It makes a lot of cookies and these are ones you can make in advance, freeze individual balls and cook only what you need later.

This is a great recipe for advanced planning if you are doing that “now” to leave more time for quick baking later.

Recipe is as follows:

Ingredients

1 1/2 cups of margarine

2 cups white sugar (not all used at once, set aside 1 cup)

2 eggs

1/2 cup molasses

2 1/4 tbsp ground ginger

2 tsp cinnamon

1 1/4 tbsp baking soda

1 tsp salt

Directions

1. Preheat oven to 350 degrees F (175 degrees C)

2. In a medium bowl, cream together the margarine and 1 cup white sugar until smooth. Beat in the egg and molasses until well blended. Combine flour, ginger, cinnamon, baking soda, and salt; stir into the molasses mixture to form dough. Roll dough into 1 inch balls and roll the balls in the remaining sugar. Place cookies 2 inches apart onto ungreased cookie sheet.

3. Bake 8-10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to wire rack to completely cool.

NOTE: Step 3 is important. Let the cookies stay on the cookie sheet and they won’t fall apart when removing from tray.
