Fun and Easy Cake Balls

Are you looking for a fun and easy finger dessert food to serve at a gathering or party?

I made these personally requested cake balls and chocolate covered pretzels for my nieces baby shower.

You can easily makes these as well.

All you need are these few ingredients…

    Your favorite cake mix
    1 tub of frosting (vanilla works best with most cake flavors)
    3 packages of flavored and colored melting chocolate

Directions

Make and bake your cake according to the directions on the package.

When complete, remove from the oven and tear the cake apart into crumbles.

Mix in a tub of frosting and blend together until the crumbles corn a huge ball of cake.

Form into small balls and place on wax paper.

Place in a freezer to coat with chocolate later.

When you are ready to coat in chocolate, melt the chocolate for 30 second intervals, while stirring between melting cycles.

*To make chocolate thinner, add a tsp of coconut oil and mix well.

Lastly, remove the cake balls from the freezer and add one at a time to the chocolate. Tap off extra chocolate and place on wax paper to dry.

If you wish to add pretty topping, be sure to add before the chocolate dries.

Bacon and Spinach Dip

Delicious Bacon and Spinach Appetizer

Are you looking for an easy and delicious appetizer and you love bacon? Try this one. I made it for my family and they loved it.

Ingredients

    • 1 package of bacon
    • 3 tablespoons coconut oil
    • 3 tablespoons flour
    • ½ teaspoon salt
    • 1 teaspoon dried parsley
    • 1 cup chicken broth
    • 1 cup almond milk
    • 1 1/2 cup shredded mozzarella & Parmesan cheese, divided
    • 1 1/2 cup shredded Queso Quesadilla cheese, divided
    • 2 cups chopped fresh spinach
    • 1 (8oz) package cream cheese
    • Fresh parsley
    • 1 Roma tomato
  • 1-2 Fresh Baguettes

Directions

  • Preheat oven at 365 degrees.
  • Place package of bacon on baking sheet. Bake for 15 minutes.
  • In a medium skillet over medium heat, melt coconut oil. Whisk in flour until smooth.
  • Add salt, dried parsley, cook for 1 minute or until smooth.
  • (When bacon is cooked, remove from oven and pre-heat oven to 400 degrees.)
  • Add chicken broth and almond milk to skillet, whisk until combined.
  • Cook over medium heat, whisking often until thick and smooth.
  • Stir in 1 cup of mozzarella and fresh Parmesan cheese and 1 cup Queso Quessadilla until melted.
  • In a medium bowl, beat cream cheese with an electric mixer until smooth.
  • Add Alfredo sauce and beat until combined.
  • Break up cooked bacon and mix until blended.
  • Add remaining cheeses and mix until blended.
  • Add 2 cups of cut up spinach and mix until blended.
  • Place mixture in an oven safe baking dish.
  • Top with fresh parsley.
  • Bake for 20 minutes.
  • Remove from oven and garnish with cut up Roma tomato.
  • Cut and serve with fresh baguette.

Chocolate Trifle

Here is a really easy recipe if you need to take a light and airy desert to someone’s Christmas Eve party today.

Ingredients

1 batch of pre-baked brownies

2 large boxes of chocolate pudding

4 cups milk (do not use soy or alternative milks as the pudding doesn’t set properly)

1 large tub whipping cream

Flavored candy of your choice (chocolate chips, peppermint chocolate chips, ground Butterfingers , ground Reese’s peanut butter cups…. anything you want)

Directions

If you haven’t done so already, bake a batch of brownies (I have an easy brownie recipe posted under recipes already if you need one.

Mix the pudding and the milk and chill in the refrigerator. Crumble your cooled brownie.

A large clear bowl works beautifully for this recipe so you can visibly show off your layers.

Begin constructing your trifle. Layer your crumbled brownie, pudding, whip cream, candy, then begin the layers over and over until the bowl is full.

Simple Pumpkin Pie Bars

Day 7

Are looking for a holiday dessert to share with your family?  This is a wonderful and light dessert to serve after a supper.

Ingredients

Crust Ingredients

1 1/3 c unbleached white flour

1/2 c brown sugar

8 tbsp butter (softened)

3/4 c chopped pecans (optional)

Filling Ingredients

8oz cream cheese, softened

3/4 c sugar

1/2 c pumpkin purée

2 eggs, slightly beaten

1 1/2 tsp cinnamon

1 tsp allspice

1 tsp vanilla

Directions

Preheat the oven to 350 degree F.

In a food processor, combine crust ingredients and pulse 2 to 3 times until mixture is crumbly. Reserve 2/3 c of the mixture for topping. Press remaining mixture evenly into the bottom of an 8×11 baking dish. Bake at 350 degree F for 15 minutes. Cool slightly.

In a medium bowl, combine filling ingredients. Using an electric mixer at medium speed, blend until mixture is smooth. Pour mixture over baked crust. Sprinkle with remaining crust topping. Bake at 350 degrees F for 30-35 minutes or until firm.

Mini Apple Pie Bites

25 Days of Christmas 

Day 4

Ingredients

1 can crescent rolls

1 apple of your choice

1/2 c white sugar

1 tsp cinnamon

1 egg yolk (egg wash)

Directions

  • Preheat oven to 375* degrees.
  • Mix sugar and cinnamon together.
  • Peel, core, and slice apple into tiny slices
  • On a lightly floured surface roll out crescent rolls, cutting them part, roll out and cut each piece into 1/3.
  • Brush each piece with egg wash, sprinkle with cinnamon sugar, plate a slice of apple on each crescent roll, roll up and place on ungreased cookie sheet.
  • Bake between 11-13 mins until golden brown.
  • Remove from oven and place directly on a cooling rack.

Merry Christmas and Happy Holidays to my faithful followers. 

Last year, every day I posted a favorite holiday recipe that I make every year from now through Christmas. These are fun and easy recipes to make. Many are ones you can enjoy making together as a family while some are ones you can throw together for a fun and festive snack your kids can come home from school too. 

I love many of these recipes because if you have your Christmas lights up and your music playing in the background, then you have the smell of these coming from your kitchen, you have set your family up for some beautiful memories of Christmas’ to come.

Homemade Chicken Noodle Soup

Soup Made Out of Leftovers

Are you looking for an easy recipe to make with left over chicken and spaghetti noodles?

This soup recipe is an easy one and great for a lunch or a supper on a cold rainy or snowy day.

Ingredients

Left over chicken (or fresh) (amount is your preference)

Left over spaghetti noodles (or fresh) (amount is your preference)

Carrots (match box sticks work best) (amount is your preference)

1/2 onion diced

1/2 tsp garlic salt

1 tsp parsley

3 cubes of chicken broth with 4 cups of water (or) 4 cups of liquid chicken broth

Directions

In a medium sauce pan on medium heat, add either the water with bullion cubes or the chicken broth to the pan. Cut up chicken into small pieces then cut spaghetti noodles into soup sized pieces. Add a handful of carrots into the broth as well as all the seasonings and onions.

Allow to cook until the carrots are soft for approximately for 20 mins.

Turn down to simmer and serve warm.

Serve with either a baguette, chips, or crackers.

Homemade Chili

1 lb ground turkey

1 lb ground pork

1 green bell pepper

1 medium diced onion

1 minced cloves fresh garlic

1 10oz can diced tomatoes with green chilies

6 oz can tomato paste

1 package of mild chili seasoning mix

1 tsp garlic salt

2 tsp chili powder

1 cup of water

1 Tbsp sour cream

a sprinkle of cheddar cheese

Directions

Place all the ingredients into a crock pot and stir well. Place on high and cook for 3 hours.

Place on a bed of riced cauliflower and add a dollop of sour cream some sprinkle cheddar cheese on top.

Baked Macaroni and Cheese

Are you looking for a side to go with your left over ham from Easter dinner?

Try this simple baked macaroni and cheese.

Ingredients

Elbow noodles

1 can of cheddar soup

3/4 can of water

1 cup shredded cheddar cheese

garlic salt (to taste)

smoked paprika (to taste)

Directions

Pre-heat the oven to 390 degrees F. Spray your casserole dish with a spray oil. Boil water in a sauce pan and add noodles when boiling, stir often. In a separate bowl add soup and water and mix well. Next, add shredded cheddar cheese and seasonings and stir everything together. Once the noodles are tender drain well and add to the cheese mixture until all the noodles are coated then put into the casserole dish and bake for approximately 30 minutes.

Serve with left over ham and a vegetable.
