Fun and Easy Cake Balls

Are you looking for a fun and easy finger dessert food to serve at a gathering or party?

I made these personally requested cake balls and chocolate covered pretzels for my nieces baby shower.

You can easily makes these as well.

All you need are these few ingredients…

    Your favorite cake mix
1 tub of frosting (vanilla works best with most cake flavors)
3 packages of flavored and colored melting chocolate

Directions

Make and bake your cake according to the directions on the package.

When complete, remove from the oven and tear the cake apart into crumbles.

Mix in a tub of frosting and blend together until the crumbles corn a huge ball of cake.

Form into small balls and place on wax paper.

Place in a freezer to coat with chocolate later.

When you are ready to coat in chocolate, melt the chocolate for 30 second intervals, while stirring between melting cycles.

*To make chocolate thinner, add a tsp of coconut oil and mix well.

Lastly, remove the cake balls from the freezer and add one at a time to the chocolate. Tap off extra chocolate and place on wax paper to dry.

If you wish to add pretty topping, be sure to add before the chocolate dries.

Crab Bombs

Easy Seafood Recipe

Keeping It Real

Crab Bombs

This is a really easy recipe I made for my family last night. If you like seafood and crabs, then this is a must to try.

I included a link on the title to access the recipe from Skinnypoints.com.

I am “Keeping It Real” by sharing my not so pretty image of my first ever made Crab Bombs. My family liked them so I will be making these more often and hopefully the more I make them, the prettier they will look.

Ingredients:

1 lb. Crabmeat

1 Egg, beaten

1 cup Ritz Crackers, crushed

1 tsp. Yellow Mustard

2 tbsp. Fresh Lemon Juice

2 tbsp. Fresh Parsley, chopped

1 tsp. Old Bay Seasoning

1 tbsp. Worcestershire Sauce

Directions:

Place crabmeat in a mixing bowl, picking any stray shell fragments out. Add crushed crackers, Old Bay Seasoning & parsley to the crab.

In a separate bowl, combine egg, mustard, lemon juice and Worcestershire sauce. Whip with a whisk until smooth.

Pour egg mixture over the crabmeat and crackers and gently mix careful not to break up large lumps of crabmeat.

Mold into golfball sized balls and place on a cookie sheet.

Bake @ 350 degrees for 30 minutes. Drizzle w/ melted butter and allow to cool.

This is what I paired my Crab Bombs with; shrimp, stuffed mushrooms, green beans, and grapes. It was a filling but light healthy meal.

Caprese Chicken, Fresh Green Beans, and Fresh Bruschetta

Are you looking for a healthy and delicious supper option?

Check out this meal.

Just for laughs, my Kiddo gave me an ”A” for presentation tonight.

What you do not know is I really do not like cooking main meals. They are burdensome to me and very boring. I love baking and place more emphasis on presentation with that, but I do not care what my main meals look like. I am just happy to have it all made for another night.

I used two different recipes tonight and will include their links to their recipes then click on the links for the full recipe.

Caprese Chicken

Bruschetta

I used a wheat French baguette for my bread to put the delicious bruschetta on. A side note, I added a little shredded Italian cheese to mine as my family loves this added feature to my bruschetta.

Fresh Green Beans

I also served my meal with fresh steamed green beans and sprinkled with a little garlic salt and dried parsley.

Enjoy your supper!

Whether You Are Weak or Strong Strength Comes From Above

Encouragement Today and Motivation Monday

A08FC9F3-195A-42C4-95D1-08992AF953CDToday’s motivation is to remind you no matter where life takes you or how easy or difficult your life may be, you are not traveling it alone.

Whether you find yourself weak or strong your strength comes from above. Your strength is not found on your own.

“As for God, his way is perfect: The Lord’s word is flawless; he shields all who take refuge in him. For who is God besides the Lord? And who is the Rock except our God? It is God who arms me with strength and keeps my way secure.” ‭‭2 Samuel‬ ‭22:31-33‬ ‭NIV‬‬

Lean on these words and allow God to lead your way through the week. Allow His strength to become your strength. Claim victory over your weakness because through your weakness God is strong.

“The victory is not when I stand up. The victory is when I realize that I can’t do it on my own.” – Nick Vujicic

My Friend, allow Him this week to be your strength. Go into it knowing you need Him by your side and allow Him full reign over what lies ahead.

Lastly, stand tall knowing no matter what happens God is in control over all of it. By doing this God will provide you with the encouragement and motivation to begin your week on the right foot.

Have an amazing week!
