25 Days of Christmas
This is a recipe my mom used when I was growing up. She loved it for its simplicity.
I hope you enjoy it as well.
This makes 3 dozen 1-inch mints
1 (3oz) package softened cream cheese
1/2 tsp peppermint extract
3 c sifted powdered sugar
Christmas sprinkle sugar (optional)
In a large bowl, with an electric mixer, beat the cream cheese and peppermint extract together. Gradually add powdered sugar and beat until smooth. Knead the last of the powdered sugar by hand.
Form mixture into balls the size of cherries and roll in sprinkle sugar. Place on wax paper and flatten with a fork.
Let it stand overnight to harden.
