This is a healthy and easy soup recipe for your family if they don’t feel good or if you just want an easy lunch idea.
2 1/2 c water (or chicken or vegetable stock)
1 chicken breast (cubed)
1 1/3 c rice of your choice (I chose whole wheat)
1/2 diced onion
1 stalk of celery
1 tsp garlic salt
2 cubes of chicken bullion (if you used water above)
1 tsp dried parsley
1 Tbsp flax-seed (ground)
In a sauce pan, boil water. Add chicken either raw or cubed already, onion, celery, seasonings. Cook on high for approximately 20 mins. If you used a raw chicken breast, remove it from water and cube it. Once cubed, add back in the pan. If it is completely cooked add your rice. Allow this to cook until the rice is tender.
